Charlotte de Morango e Frutos Vermelhos // Strawberry Charlotte with Berries



É Verão com toda a força. Calor e sol, dias longos cheios de luz, finais de tarde lindos . Que dão vontade de criar receitas frescas e petiscos, para partilhar e ir comendo devagar. Reinam as saladas e os pratos rápidos, os refrescos e as limonadas, os gelados e os sorvetes, e todas as frutas e todas as cores. Enquanto há frutos do bosque vou usar e abusar deles, quer seja em smoothies para o pequeno-almoço, em saladas para as refeições e em sobremesas e gelados para os domingos em família.

Surgiu a oportunidade de criar esta Charlotte de morangos e frutos silvestres, para o dia mundial da pastelaria, em colaboração com a Makro Portugal. Que foi um prazer preparar, decorar e fotografar, e depois ser servida e aprovada pelos gulosos do costume. É um prazer fazer sobremesas frescas, que fogem um bocadinho à rotina dos dias, e me permitem inspirar nas frutas da época. Ir ao sabor das estações é sempre o lema, o caminho a seguir no paladar. Cuidem-se muito, mantenham-se frescos e hidratados, em segurança e com todos os cuidados que estes tempos ainda requerem. E de vez em quando ataquem uma sobremesa bem fresca, sabe tão bem.

CHARLOTTE DE MORANGO E FRUTOS VERMELHOS


25-30 palitos la reine

para a calda:
5 colheres de sopa de água
2 colheres de sopa de açúcar
1 colher de sopa de kirsch ou rum

para o recheio:
400 gr de morangos
200 gr de açúcar
1/2 colher de chá de pasta de baunilha
7 folhas de gelatina
250 ml de iogurte grego natural
400 ml de natas para bater 

para o topping:
morangos, framboesas e groselhas q.b.



Preparação

Preparar o creme, colocando os morangos, o açúcar e baunilha numa panela, e levar a lume brando, deixando ferver e ir mexendo, durante uns 15-20 minutos, até formar uma compota ligeira. Triturar com a varinha mágica até ficar homogéneo. 
Enquanto preparar a compota, colocar a gelatina a demolhar por uns 5 minutos, depois aquecer até derreter (lume ou microondas), e juntar à compota ainda quente e mexer muito bem.
Deixar a compota arrefecer ligeiramente, e juntar depois os iogurtes e mexer. E por fim as natas bem batidas e firmes, e envolver suavemente. Colocar o creme no frio até usar.
Forrar uma forma de fundo amovível com 20 cm de diâmetro com película aderente.
Preparar a calda aquecendo tudo e até o açúcar derreter. Espalhar parte dos palitos la reine no fundo da forma e regar com esta calda morna. Colocar os restantes palitos (cerca de 16) a toda a volta e ao alto na forma. Encher o centro com o recheio de morango. Tapar com película aderente e levar ao frio durante a noite para solidificar. 
Na altura de servir, desenformar com cuidado e colocar num prato de servir. Espalhar morangos, framboesas e groselhas no topo a gosto.

STRAWBERRY CHARLOTTE WITH BERRIES

25-30 ladyfingers (or more)

for the syrup:
5 tbsp water
2 tbsp caster sugar
1 tbsp kirsch or rum

for the filling:
400 g strawberries
200 g caster sugar
1/2 tsp vanilla paste
7 gelatin sheets
250 ml greek yogurt
400 ml whipping cream

for topping:
strawberries, raspberries and red currants



Method

To prepare the filling, place strawberries, sugar and vanilla in a pan, and cook it slowly, for around 15-20 minutes, until you get a soft jam. Blend it until homogenic in texture.
While you prepare the jam, place the gelatin in water to soak for 5 minutes, then heat until it dissolves, and add it to the jam, mixing it very well. 
Leave the jam to cool and then add the yogurts, mix and then beat the cream until soft peaks and add it too, mixing it gently. Place this filling in the fridge until using.
Use a 20 cm diameter round springform pan and line it with cling film, so it´s easier to remove the charlotte after.
Prepare the syrup heating all the ingredients until sugar dissolves. Spread a layer of lady fingers on the base of the pan and drizzle the syrup on them. Place more ladyfingers in a circle around the edge of the pan, and standing. Fill the center with the strawberry cream filling. Cover it up with cling film and put it in the fridge overnight.
To serve, remove it from the pan gently and spread strawberries, raspberries and red currants on top.
